Have you done these before? Do you have any tips?
Will it work if I just add like 1/2″ ease all around the
normal pattern?
Should I use less seam allowance of the fleece lining
than the outer fabric so that the lining will fit inside
the outer fabric nicely. I plan to use microfleece.

I haven't used microfleece to line jeans yet, but I did use it to make leggings for cycling in the winter and was surprised by several things: 1) Fleece, though actually a knit fabric, doesn't have the stretch of knit, so it requires the ease you'd use for a woven fabric. 2) Even microfleece, which is relatively thin, is fairly thick. You might want to make up the lining first, then measure yourself wearing it to determine the ease you will need in the jeans. 3) Microfleece and denim are very, very different fabrics, so I would attach them only at the waist and hem the legs separately so that they don't twist and pull against each other. 4) To reduce bulk around the zipper/front pocket area, consider cutting away the fleece around the openings in the denim.
If all this seems too complicated, you might want to make a pair of leggings to wear under your jeans. It would be just as warm, but much more versatile.
