I think the pattern companies are doing an excellent job of keeping up with fashion trends. My 23-year-old daughter frequently asks me to make her the latest great top or dress; I nearly always can find a similar pattern immediately. However, it's hard to find the most up-to-date fabrics for these new styles, especially knits.
When you say "our grandmother's styles," you must be thinking of a much younger grandmother than mine, who was born in the late 1880s! (Big families, long generations.) In her portrait, she's wearing leg-o-mutton sleeves and a wasp waist: a lovely Gibson Girl gown which I'm sure I could find, but only in the historical costumes part of the pattern catalogs.
