My Standard Book of Quiltmaking (1949) lists the first as Hexagon. Rising Star has a 6-point star within a hexagon, as does Flower Star. Star of Bethlehem has a central hexagon, and one called Winter Quilt uses small hexagons in dark and light arranged in diamonds. A similar one, arranged in darks and lights around a central motif is called Honeycomb or Mosaic.
When my daughter did a similar project in math class, she found a lot of patterns on the internet under the search term: "Tesselations+hexagons."
The best known hex pattern is Grandmother's Flower Garden. There's a really fab pattern called Jack's Chain that has hexagons, triangles and squares. Depending on the choice of fabrics (the values), different shapes stand out.
