Well...... two pieces, may be better that one; depends on what you are making?
A jacket's two piece sleeve is different than a dress or blouse.
There was an article in Threads mag a few months ago about sleeves and I think they had some good drawings. If you don't have that issue....... the basic idea is just divide the sleeve pattern where you want the seam and add a seam allow. to each piece. The new seam is a good place to add a little extra room for full upper arms! You can curve the new seam out a little where you need it wider! (on both pieces of course!)
I re-draw the pieces, don't cut the original sleeve apart!
