I have several jacket patterns that use hooks and eyes for the front closure. I would really like to try inserting a separating zipper instead. Would you just add a seam allowance to each center front?

Yes, that's all you do. Make the seam allowance at least an inch wide. You may have to do a little altering on the facing (if you want one).
The important thing about inserting zippers like this is to mark, mark, mark....a good idea to mark both zipper and jacket fronts at least four times so they match so when the zipper is inserted it neither bulges nor stretches the jacket. I also take an accurate measure of the front opening before doing anything, again you don't want it to stretch or wrinkle.

I would also add interfacing to stabilize the front area to prevent it from stretching and be sure to preshrink the zipper before you put it in. If you can use a stabilizer then be sure to run a basting stitch down each side of the folded-back front pieces, again, to keep it from stretching and subsequently puckering. Z
Thanks, zuwena. Interfacing really does make a difference when it comes to keeping those zippers from buckling. (Which I never seem to remember til AFTER I've put them in!)
