a few years ago i was involved with a co. that made vest like the one you are asking about.
Most of ours were made of recylced blue jeans, or similar wieght fabrics. It's suprising how heavy buttons become. You will need a heavy fabric because of this.
This is how we did ours. After cutting the vest fronts the buttons were applied with embroidery floss(all strands) by hand with a long skein so that you have as few knots as possible. You must remember to leave your seam allowence and room for preasure foot free of buttons. The vest was then lined to cover threads.
It also helps to layout your buttons before hand to see what type of pattern you might like and how it would look.

*cat-thanks for your e-mail. have not been able to start my button vest yet, my work weeks have been staggering. found a heavy black cotton in my stash and will try that. will probably use regular all purpose thread though. saw this vest on some craft show and it looked great.
