I am planning to make a t-shirt pattern using knit fabric or some other stretchy stuff. Do I set my software (PM Tailor Made) to No Ease, extreme ease or somewheres in between?

You could work with any of those ease settings, depending on the end result you are after. As in, just how tight do you want this t-shirt to fit? Sometimes it will vary depending on the amount of stretch in the fabric and two shirts made from different fabrics with the same pattern can look and fit differently. Why don't you wrap a length of your proposed fabric around you (or the person you are making the pattern for) and see how you would like it to look. Measure the width and use that as a guide for establishing the amount of ease. Does this make sense?
Went with one of the middle eases. Still have to sew it together to see how it fits. This would be for a interlock knit type of shirt that would be serged. Thank you.
